So maybe I'll start blogging again....

So much has changed since I took my hiatus so long ago.  I needed some time to acclimate to being a new mother of my son (now 3) and just life in general!  So I'll start with what has been on my mind lately.  Baby names! Ugh! I'm expecting another boy in July and have been trying to find the perfect name.  So here's what links have been distracting me lately:

But this one was a waste, because at the end they ask for your email to get the results.  I just finished this whole quiz but now I get no name. Boo.  I don't want to be added into another emailing list. I already get tricked trying to save paper by opting to send my reciept to my email address--only to later find out I'm now on THAT store's emailing list too...I've even asked "will I be put on a list?" And the answer is always "absolutely not!" Double boo. The tricksters...

REALationships: Never Fight Fire With Fire

So I saw this quote while reading my Youversion plan this week and I couldn't agree more, so I wanted to share.  A little background: I'm married. And I feel like its a very healthy and marriage, although far from perfect I'm sure.  But when people ask my husband and I what makes it work so well--this is one of the first things that we say--it is also one of the hardest things to do in the beginning of a relationship, but SO worth it. 

You can't fight fire with fire. 

In ANY relationship.  And if it is more important for you to be "right" than you've got a long (lonely) road ahead of you. Just wanted to pass this along in case it helps someone. #loveisreal #andpatientandkind

My Green Thumb!

Now that its spring, I have been thinking of starting a vegetable garden and had no idea where to start, until I stumbled upon SmartGardener. This site helps you:

1. Set up your garden
2. Select your garden plants &
3. Create your plan

It even sends you weekly reminders for what to do.  I know that in times like these more and more people are valuing where their food comes from and that we are trying to cook with the freshest, healthiest ingredients.  At least I know I am.  What is fresher than food from your own garden? Cheaper, better tasting, and full of nutrients.  Don't have a space to have your own garden? Check into community gardens in your area--many places have them and you can rent a plot for as cheap as ten bucks.

Safety First

I received the following e-mail and wanted to pass it on. In modern times, one must always be on the forefront of new developments--and here is a relatively new shift in crime. Don't know how true this is, but there are some great procedural safeguards to consider.

A very interesting article. The electronic age has produced electronic criminals.

1. A family left their car in the long-term parking in San Jose while away, and someone broke into the car. Using the information on the car's registration in the glove compartment, they drove the car to the people's home in Pebble Beach and robbed it. So I guess if we are going to leave the car in long-term parking, we should not leave the registration/insurance cards in it, nor your remote garage door opener. This gives us something to think about with all our new electronic technology.

2. GPS.
A couple of weeks ago a friend told me that someone she knew had their car broken into while they were at a football game. Their car was parked on the green which was adjacent to the football stadium and specially allotted to football fans. Things stolen from the car included a garage door remote control, some money and a GPS which had been prominently mounted on the dashboard. When the victims got home, they found that their house had been ransacked and just about everything worth anything had been stolen. The thieves had used the GPS to guide them to the house. They then used the garage remote control to open the garage door and gain entry to the house. The thieves knew the owners were at the football game, they knew what time the game was scheduled to finish and so they knew how much time they had to clean out the house. It would appear that they had brought a truck to empty the house of its contents.

Something to consider if you have a GPS - don't put your home address in it...
Put a nearby address (like a store or gas station) so you can still find your way home if you need to, but no one else would know where you live if your GPS were stolen.

3. MOBILE PHONES

I never thought of this...

This lady has now changed her habit of how she lists her names on her mobile phone after her handbag was stolen. Her handbag, which contained her cell phone, credit card, wallet, etc., was stolen. 20
minutes later when she called her hubby, from a pay phone telling him what had happened, hubby says 'I received your text asking about our Pin number and I've replied a little while ago.' When they rushed down to the bank, the bank staff told them all the money was already withdrawn. The thief had actually used the stolen cell phone to text 'hubby' in the contact list and got hold of the pin number. Within 20 minutes he had withdrawn all the money from their bank account.

Moral of the lesson:

a. Do not disclose the relationship between you and the people in your contact list. Avoid using names like Home, Honey, Hubby, Sweetheart, Dad, Mom, etc...

b. And very importantly, when sensitive info is being asked through texts, CONFIRM by calling back.

c. Also, when you're being texted by friends or family to meet them somewhere, be sure to call back to confirm that the message came from them. If you don't reach them, be very careful about going places to meet 'family and friends' who text you.

Food 101: Chicken/Eggplant Parmesan

I made this for dinner the other night--it's one of my favorites!

Rose's Chicken or Eggplant Parm

Ingredients: Chicken and/or eggplant, an egg, italian bread crumbs, olive oil, spaghetti, marinara or your favorite spaghetti sauce (or you can make your own sauce)

1. Get the ingredients together for the chicken or eggplant slices so you have a little assembly line.

2. Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them (or put inside a ziplock).

3.Pound the chicken breasts with a flat meat mallet, until they are about 1/2-inch thick. Then season with salt and pepper.

4. In a wide bowl, combine the egg and a bit of water or milk- and , beat until frothy.

5. Put a cup of Italian bread crumbs on a plate.

6. Heat 3 tablespoons of olive oil over medium-high heat in a large oven-proof skillet.

7. Lightly dredge both sides of the chicken cutlets in the egg wash to coat completely, letting the excess drip off, then dredge in the bread crumbs.

8. When the oil is nice and hot, add the cutlets and fry for 2-3 minutes on each side until golden and crusty, turning once.

9. Ladle your favorite marinara or spaghetti sauce over some cooked spaghetti and add the chicken and sprinkle with mozzarella, Parmesan, and season to taste.
